A traditional German mulled wine ('Glow Wine') typically enjoyed during the holidays and at Christmas markets. This warming beverage features a base of red wine gently heated with a spiced syrup infused with cinnamon, cloves, and lemon peel.
What it tastes like
Aroma is dominated by warm cinnamon and pungent cloves with a sharp citrus peel background. The flavor is a mix of dark berry fruit and woody spice tempered by moderate sweetness. The mouthfeel is medium-bodied and warming, while the finish is dry with a lingering tannic grip from the wine.

Preparation

Place the water, sugar, cinnamon stick, cloves, and lemon peel into a pot.

Bring the mixture to a boil to dissolve the sugar and release the spice flavors.

Remove from heat and let the mixture steep for 30 minutes.

Strain the spiced water to remove the solid ingredients.

Return the spiced liquid to the pot and add the red wine.

Heat the mixture slowly over low heat until it is hot but not boiling (approximately 170°F/75°C). Avoid boiling to preserve the alcohol content, unless a lower ABV is desired.

Taste and add a splash of lemon or orange juice if additional acidity is desired.
