How to Make It

  1. Combine milk, chopped chocolate, orange peel strips, instant espresso, and nutmeg in a heavy medium saucepan.
  2. Stir continuously over low heat until the chocolate has completely melted.
  3. Increase the heat and bring the mixture just to a boil while stirring often.
  4. Remove from heat immediately and whisk vigorously until the mixture is frothy.
  5. Return the pan to the heat and bring to a boil again.
  6. Remove from heat and whisk until frothy.
  7. Repeat the heating and whisking process one final time for maximum frothiness.
  8. Discard the orange peel strips.
  9. Pour the hot chocolate into coffee mugs and serve immediately.
